What is disinfection? It can be defined as the removal from the surface of every pathogen organism that can cause an infection.

the surface remain dry because it gets heated under the stream of steam and the little remaining water on it evaporates immediately.
The operator avoids thus the chemical risk of acids, alcohol based products, fenoils, etc.
